DELICIOUS IN FRAGRANT RICE
Cardamom is the dried, unopened fruit of a plant native to south India. It has a warm spicy sweet flavour. Use quite generously.

After a spice that packs a punch? Fragrant cardamom has a complex flavour profile, with citrusy, minty, spicy and herbal notes all at once. While overpowering when eaten whole, adding whole cardamom pods to dishes unleashes a beautiful warmth during the cooking process. Cardamom pods are often used in Indian cuisine, appearing in everything from pilau rice to a creamy chicken korma. While it has spicy notes, cardamom pods are also in sweet dishes, such as festive spiced cookies, Scandinavian sweets and creamy custard.
Why not try...
lightly crushing the pods for use in Indian cooking and in fragrant rice. To use in cakes, shortbread and fruit salads, crush the pod, remove and use the seeds.
Store in a cool, dry place out of direct sunlight.
